In this recipe I’ll show you how to make Onigiri with three delicious vegan Onigiri fillings. Onigiri is the perfect portable snack. It’s easy to pack and can even be eaten while you are walking.
Vegan Onigiri Filling
For the vegan Onigiri I’ll use three different vegan fillings. But the options are unlimited. You can use anything you like as a filling for the Onigiri.
I combine the edamame with vegan mayonnaise and sesame seeds. The teriyaki tofu with spring onions and sesame seeds. And I decided to let the carrot salmon shine on its own.
How to make Sushi Rice?
You can cook the sushi rice in a pan on the stove or use a rice cooker like I did. To get the perfect texture it is very important to wash the rice before cooking. Just gently wash the rice with your hands in a pot and drain several times until the water becomes clear.
For the amount of water I always just follow the instructions on the package. To give the rice extra flavour I’ve added 5 tbsp of rice vinegar and one tsp of salt. Let the rice cool completely before making the Onigiri
How to make Onigiri?
Now we’ve discussed the filling and the rice I’ll show you how to make the Onigiri. Before you make the Onigiri dip your hands in a little water to prevent the rice from sticking. You just want your hands to be a little wet. If you add too much water the Onigiri will become soggy.
Start by grabbing a little bit of rice and flatten it in your hand. Next add a little filling. Be sure not to add too much or it won’t fit inside. Grab some more rice and cover the filling with with rice. When the filling is covered press the rice a little to make sure it won’t fall apart. And start forming. a triangle shape by rotating the rice in your hands. Watch my youtube tutorial to see this process in more detail.

Below are the Onigiri’s with carrot salmon and teriyaki tofu.
When you have the perfect Onigiri shape you can wrap the Onigiri in a small piece of nori. The nori give the Onigiri it’s signature look and also make it possible to eat the Onigiri without getting rice on your hands.
You can also make the onigiri with a mold. No more dirty hands :).
For some extra garnish sprinkle some sesame seeds on top.
