Each stuffed bell pepper is only 91 kcal so you can eat a lot of them. Or pair a few stuffed bell peppers with some potatoes and your favourite sauce.
How to make the Stuffing for the Vegan Bell Peppers?
The stuffing for the vegan bell peppers is really easy to make. Just dice the zucchini, onion and tomatoes. Also slice the potatoes in smaller parts. And mix the diced zucchini, onion and tomatoes with the potatoes, vegan minced meat and canned tomatoes.
How to Stuff the Bell Peppers?
To stuff the bell peppers you’ll have to cut a hole around the stem of the bell pepper. When you’ve made the hole make sure you remove all the seeds. You can also remove the pith of the bell pepper if you like. Next start filling each bell pepper with the stuffing.
Bake the stuffed bell peppers in the oven on 220°C for approximately 30 minutes or until they are soft.
You can eat as many stuffed bell peppers as you want. Or eat a few and add some potatoes and sauce.
