Simple and Delicious
With only a few simple ingredients you can create these delicious vegan Zucchini Lentil Fritters. In contrast to most fritters these vegan Zucchini Lentil Fritters are very healthy. They contain a good balance between vegetables, protein and carbohydrates and are baked in a little olive oil.
Draining the Zucchini
To get the fritters crispy it is very important to drain the water from the zucchini. You can use a cheese cloth or a clean dish cloth. Just put the grated Zucchini in the cloth and squeeze all the water from the zucchini in a bowl.
Cooked Lentils
It is also very important to use cooked red lentils for this recipe. You can buy canned red lentils in the grocery store or buy uncooked red lentils and cook them at home. Not all Lentils are easy to cook but red lentils are very user friendly. Just cover the lentils with water and boil them for 5 minutes. When the lentils are soft you can drain them and add them to the mixture for the fritters..
Bake Golden Brown
The vegan Zucchini Lentil Fritters taste best when they are baked on both sides until they are golden brown. To enhance the texture you can also let the fritters rest a few minutes on a plate after you’ve baked them. This way the inside will firm up a little more without the risk of overcooking or burning the fritters.
Add Vegan Cream Cheese
To finish the recipe add some spring onions and vegan cream cheese. This step is actually optional but the flavour of homemade Cashew Cream Cheese lifts the fritters to a whole new level. Once you’ve tried this you’ll never make them without the cream cheese anymore.
