How to make Vegan Mashed Cauliflower?
To make the vegan mashed cauliflower start with boiling the cauliflower. You can use fresh or frozen cauliflower. I used frozen cauliflower for convenience.
When the cauliflower is cooked you can drain the water and add a little plant-based butter to the cauliflower. Melt the butter in the pan and puree the cauliflower with a fork or blender. Next, add the nutritional yeast and the spices. Finally, add some plant-based milk for an extra creamy texture.

You can eat mashed cauliflower instead of rice or potatoes with some vegetables and vegan protein. Such as chickpeas or tofu.
I love to use mashed cauliflower as a pasta sauce. You can also substitute part of the pasta with the mashed cauliflower for a lower-calorie meal. The mashed potato is very filling and this way you won’t have to give up the carbs completely.
