In this recipe I’ll show you how to make this delicious 2 ingredient vegan coconut caramel sauce. This coconut caramel sauce is gooey, rich and creamy. It’s perfect for desserts such as cake, fruits and ice cream.
How to make Coconut Caramel Sauce?
Start by dissolving the sugar. It is very important that there are no lumps in the sugar. Spread the sugar in the pan. And let the sugar melt on low heat. This can take a couple minutes.
When you see that the sugar is starting to melt you can stir the sugar slowly. Don’t stir all the sugar at once if you see that only one part of the sugar is starting to dissolve. If you mix too much of the undissolved sugar at once into the melted sugar you’ll get lumps. When the sugar is completely dissolved make sure you’ve also mixed in the sugar that’s sticking at the corners of the pan.

Next it’s time to mix in the coconut milk. The coconut milk has to be warm to prevent the caramel from crystallising. It is also important to add the coconut milk little by little. Start with a tsp of coconut milk and mix until the caramel and coconut milk are combined well. Next add a little bit more coconut milk and mix again. Continue until you’ve used all the coconut milk. Let the sauce thicken up a little and your coconut caramel sauce is ready!
