In this recipe I’ll show you two methods to make vegan salmon from carrots. The vegan salmon is really easy to make and tastes delicious on bagels or small crackers with vegan cream cheese or mashed avocado.
How to make Vegan Carrot Salmon?
Before we can start cooking it is important to clean the carrots. Peel the carrots with the a vegetable peelers. And remove any other dirty parts with a knife.
Vegan Carrot Salmon Method 1: Oven.
The first method is to bake the carrots on 180°C for approximately 40 minutes in the oven. The carrots should be in the oven until they are soft. When the carrots are soft the texture will be more similar to salmon.
When the carrots are baked you can slice them with a vegetable peeler or a knife. The carrots are a little hard to slice with a vegetable peeler when baked. But with the peeler you’ll end up with nicer slices in my opinion. Just apply a little pressure and you’ll be able to cut through the carrot skin.
It is also very important to note that you should slice the carrots after they are baked. If you put the carrot slices in the oven you’ll end up with carrot chips. Which is also nice but not what we’re aiming for in this recipe.
Vegan Carrot Salmon Method 2: Steaming.
The second method is to steam the carrots. For this method you do need to slice the carrots before steaming. The carrots are earlier to slice when they are raw. And you’ll only need to steam the carrots for 5 until they become soft. So if you are a little impatient or don’t have a lot of time I recommend the steaming method. However if you do not have a vegetable peeler the first method will be easier.

How to Marinate the Vegan Carrot Salmon?
The marinade for the vegan salmon is quite easy to make. Just put all the ingredients in a food processor and blend. Pour the marinade over the sliced carrots and let it marinate for 1 to 3 days. You can also marinate shorter if you are impatient but the longer you wait the stronger the flavour will be.

How to use Vegan Carrot Salmon?
You can make many different dishes with the vegan carrot salmon. My favourites are on toast with mashed avocado or cream cheese. It’s also really delicious if you add some capers and red onions.
Also if you do not like the look of the nori chunks on the carrot. You can remove them before serving the carrot salmon.
