I love stuffed potatoes. They are one of the most stress free dishes and so delicious. When I’m making these I usually pick some easy toppings and chill on the couch while the potatoes are in the oven.
Baking the potatoes
I’ve chose some really large potatoes because they look really nice with the stuffing. The large potatoes do take quite some time to get fully cooked in the oven. It took me approximately one hour and 15 minutes to bake the potatoes in the oven at 220°C. So keep in mind to start baking the potatoes on time.
Before putting the potatoes in the oven prick a few holes with a fork in the potatoes. When the potatoes are in the oven you don’t have to do much. You can bake the chickpeas in the mean time and relax a little bit. Do check the potatoes a couple time in between to see if everything is going well. The potatoes are ready when they are fully cooked and soft.
Baking the chickpeas
The chickpeas are really easy to make. Just put a little olive oil, garlic and the chickpeas in a pan. And bake them approximately 10 minutes on medium heath. You want the chickpeas to become a little crispy. Add some salt and pepper to taste and your chickpeas are ready.
Stuffing the potatoes
When the potatoes are baked you can slice them open and start mashing the inside with a fork. Make sure you leave the skin intact. When you’ve mashed the potato you can divide the mashed potato evenly in the skin and start adding any toppings you like. I’ve added carrots, red cabbage, the chickpeas and guacamole.
Finish by sprinkling some red cabbage and chickpeas on top and your vegan stuffed potatoes are ready!! You can also make some extra potatoes and save them for lunch.
